Traditional Peruvian sandwich


Peruvian Butifarra with Mocheros

Serves: 6

Butifarra is a traditional Peruvian sandwich for a light, enjoyable meal. Usually made with Ham but its possible to use Turkish or chicken cold cut as a nice alternative. Please note that the Criolla sauce has to be freshly prepared and kept in the fridge to preserve its flavor. The bellow recipe takes in consideration the probability you do not have available Peruvian “aji Amarillo paste” so I am advising an alternative *.

A recipe for a traditional Peruvian sandwich


Ingredients:

• 6 ciabatta bread or baguette bread, or Roll medium

• 6 lettuce leaves

• 300 grs. Turkish /or chicken slices.

• 1 tspoon of Mocheros.

• 1 yellow / orange bell pepper.

• 1 cup mayonnaise

• 1 tablespoon of mustard

• 1 tablespoon of Peruvian yellow chili pepper paste ( *substitute)

(*) Cut then blend in a blender; 1 free of seeds, yellow / orange bell pepper with neutral oil ( 50ML) + 1 tspoon of Mocheros . ( if needed add a bit more of oil to get a flowing blending )

• 1 serve of Criolla Sauce ( see Criolla sauce recipe below)

Criolla sauce

Serves: 6

Ingredients

• 1½ red onion, cut into very thin strips from stem to root ( Juliana cut)

• 1 red hot pepper cut into thin strips. • 6 tablespoons chopped coriander leaves (not too fine) • Salt and pepper ( freshly grinded ) • Juice of 4 Lime lemons

• 1Tbspoon of apple vinegar.

• 3 tablespoon of olive oil

Instructions

1. Put the sliced onion in a bowl of cold water with Ice and apple vinegar. Let it stand, for 10 minutes, drain well. 2. Apart, in another bowl, combine the drained onion, chili, salt and pepper, coriander leaves, lemon juice and olive oil. Mix carefully. Use immediately or keep in the refrigerator, tightly covered, for a couple of hours .

Putting all together Instructions

1. Preheat oven to 300 ° F.

2. Heat the bread for about five minutes and cut in half lengthwise.

3. Combine In a bowl the mayonnaise, mustard and yellow pepper paste. Spread generously

on both sides of the bread.

4. Arrange a lettuce leaf on each bread, then a few slices of ham and finally place a portion of

Criolla sauce.

5. …And now to enjoy.
